I wrote my CV using \(\rm\LaTeX\). I could find that when introducing chinese characters there is a complication. You can use CJKutf8 package and compile your document using pdflatex or you can use fontspec package and compile your document using xelatex.

Using pdflatex is straightforward but without further options to allow customizations. Using xelatex is more tricky but allows you to use OTF/TTF fonts with many possible customizations.

Please check my Github repo to see a simple example with Jackie Chan and some of his movies.
